Several parcels of fruit were selected for the Rose; some was crushed and pressed with a short time on skins to pick up some colour in the juice. Some riper picked fruit was handled by the ‘Saignee’ method; the juice being drained from the crusher with just a hint of colour and then fermented at ~ 15 C to dryness. We’ve bottled this wine early so as to maximise all the delicate fruit flavours.
COLOUR: Attractive blush pink with the tiniest hint of mauve.
AROMA: Very aromatic on the nose with pungent sweet strawberry fruit aromas with a touch of musk sticks & lollies.
PALATE: Has delicate, cherry fruit flavours on the palate with a hint of spice and light savoury characters. This wine has a beautiful palate weight and great mouth feel with the delicious fruit flavours balanced by the lightly drying finish. A superb wine that can be enjoyed on its own but is also dry enough to serve with food. Best enjoyed as young wine.
