This Chardonnay is all from our Mt Barker vineyards in the Great Southern. Fermented entirely in French oak, it’s gone through malolactic fermentation for a further complexity and to develop some textural characters. Made ‘the way they used to be’, this is a flavoursome Chardonnay with great fruit flavours and a beautiful acid balance.
|Fruit Maturity:||Fruit was picked at 13º Be|
|Blend:||100% Chardonnay; Langton vineyard, Mt Barker|
|Colour:||Bright with a light-medium straw colour.|
|Aroma:||Lovely aromas of fresh, toasty French oak with light buttery characters (reminiscent of a freshly baked almond croissant!).|
|Palate:||There’s a good level of toastiness from the oak used during fermentation, complemented by the buttery pastry flavours from the malolactic fermentation. A wine with good texture and palate weight, the delicious ‘peach crumble’ fruit flavours are complexed by the toasty oak and a gentle acidity on the finish.|
