75% Shiraz, 25% Durif
Selection of fruit from Debortoli Rutherglen Burgoyne and Shelleys Vineyards.
The 2016 growing season got underway quickly shortly after Rutherglen received average winter rainfall, whilst most of the rest of Victoria received very little rain. Budburst was normal, however October was 6°C above average and the vines grew strongly after the perfect start. The vines kept ahead of the average schedule with a fine, dry October and November. From then on, summer featured slightly above average temperatures, and was dry with perfect ripening conditions. Vintage started slightly early but finished four weeks earlier than average - it was a very compressed vintage. There were constant warm days, without too many days over 40°C. In summary, the season was ideal for growing grapes and the outcome is an above average year in Rutherglen for most varieties.
Fresh fruit flavours and aromas of pepper, spice, chocolate and anise with a subtle touch of residual fruit sweetness. This wine is a mouthful of flavour and fizz, and is the perfect complement to any celebratory occasion.
Separate batches of Rutherglen's iconic red grape varieties; Shiraz and Durif wines were selected and blended to produce a fresh, fruit driven and intensely flavoured dry red base wine with great balance and soft rounded tannins. We have added the ‘sparkles’ via the traditional ‘methode champenoise’ - the wine was bottled with a touch of sugar and yeast, and allowed to undergo secondary fermentation to produce the ‘fizz’. It was left to sit for nine months before the removal of the yeast and dosage or ‘sweetening’ with a small amount of liqueured port added for complexity.
