The De Bortoli 'Melba Vineyards' at Dixons Creek have a rich history of exceptional quality Cabernet Sauvignon and consistency dating back to the 1970's. The Melba Vineyard Cabernet Sauvignon is blended from mature vineyards on the Yarra Valley estate and only released in exceptional years. 2012, 2015 and 2017 all fit this criteria
First planted in 1971 with additional plantings in 1987, 1988 and 1990. For over 30 years the best parcels of Cabernet have been carefully managed to produce grapes with full concentrated flavour and firm fine tannins.
The release vintages are characterised by long mild autumns where the tannins produced late in the season gives fine structure and ultimate longevity. Was a long growing season, mild and dry autumn, lots of tannin development built in the last 2 weeks of ripening.
Bright, deep with purple hue. Rich blackberry, deeply scented, cedarwood, leaf and spice. Dark fruits, fine powdery tannin, long, smooth and fragrant finish.
Fruit is destemmed followed by light crushing. Individual vineyard batches were fermented on skins for up to 30 days. At the desired balance of fruit and tannin extraction, each batch was gently pressed. The individual parcels were racked to oak after pressing. Regular rackings over an 18-month period ensured the individual wines are at their best prior to blending. Matured in individually selected high quality French oak casks for 15 months (40% new). Bottled and stored at a controlled 16°C before release.
