Colour In the glass, the wine has a concentrated dark cherry red colour with a violet and purple hue to the edges.
NoseThere are lifted dark cherry and black plum aromas along with subtle dusty spice, dried rose petals and rich polished leather overtones.
PalateThis is a rich wine with berry-laden, dark chocolate characters underpinned by a hint of sweet leather. The oak maturation brings depth and length to the palate with a lovely tannin line. The wine is very well balanced with well integrated oak and the finish is persistent and imminently enjoyable
Winemaker NotesThe fruit for this wine was sourced from premier blocks on the Taylor family estate in the Clare Valley. As soon as the grapes were harvested, they were quickly transferred the short distance to our winery cellars. After de-stemming, the fruit was cold soaked at 6 C for a period of 5 days to ensure optimum colour whilst retaining fruit expression. After this, the fruit was transferred to small static stainless steel tanks and a cultured yeast was added to start fermentation. The fruit fermented at an even warm temperature with the must turned over four times daily using our gentle gas mixing system to aid gentle colour and tannin extraction. Post fermentation, the wine was pressed and transferred to a mixture of both American and French oak barrels (20% new and 80% 1 – 3 years old) to complete malolactic fermentation. After maturing in oak for a period of 20 months, the wine was blended, filtered and bottled.
