Wine: The 2017 vintage was a unique one for Margaret River with a more than late start to the growing season, on top of unusually cooler temperature not experienced since the notorious 2006 vintage. Unlike 2006 the season experienced a below average rainfall on the northern part of the cape and cooler temperatures which has resulted in an amazing Sauvignon blanc with immense longevity.
Sourced from our vineyard at Buckshot Ridge in Margaret River located in the Wilyabrup sub-region, we strive to make a wine unique to this vineyards ‘terroir’ and site influenced characteristics.
Vinification: The ‘Wild One’ as the name suggests is a reference to the wild fermentation of this wine in both large format oak barrels (30%) and in stainless steel tanks (70%). Hand-picked, 100% whole bunch pressed to both oak and tank. We have not settled the juice, and allowed whatever indigenous yeast present to initiate the fermentation process. The wine spent three months on lees in both tank and oak in order to gain further texture and complexity before it was bottled in July.
Tasting Notes: The 2017 Vintage has culminated in a wine that has the right hallmarks of a youthful, ripe but powerfully structured wine. Intense citrus, lime zest and subtle gooseberry nuances are encapsulated in this unique wine. Finley textured with subtle oak influence this wine is still very ultra-fresh with a defining acid backbone, which will enable this wine to last for a long time.
Food Pairing: Would simply go fantastically well with some deep fried Western Australian fish and chips, preferably whiting or Dhufish.
