NOSE Green apple, fresh cut lemon.
PALATE Overall a dry palate of granny smith apples, fresh lemon and lime citrus, finishing clean and fresh.
VINIFICATION Picked early in the season to retain the acidity, the grapes were harvested in the night and transported to the winery only a few hundred metres away, thus minimising any oxidation. After processing the base wine, Charmat method (often called the Italian method as its used widely in Prosecco) was utilised for a soft and elegant spritz.
CELLARING Drink now while the fresh fruit flavours dominate.
The wine is bottled young and drinks particularly well with lightly flavoured foods on a sunny afternoon.
SERVE Serve well chilled 5-7C.
FOOD Freshly shucked Albany Rock Oysters, squeeze of lime.
