Appellation: Great Southern
Composition: 100% Pinot Noir
Residual Sugar: 0.42g/L
Growing Region: 100% Frankland River fruit sourced from our Ferngrove Vineyard, Great Southern.
Notes: Overall, a good vintage for Ferngrove, especially against the seasonal challenges. Luckily enough the dry growing season and exceptional vineyard management provided great conditions for our reds with lovely lifted ripe fruit flavours and elegant tannin structures.
Winemaking Notes: A select portion of fruit was hand harvested and transferred to our small, open five tonne fermenters as whole bunches. The fermenters were topped with fruit that had been gently de-stemmed. The must was cold soaked for several days prior to warming and then fermenting with a peak temperature of 28 C. Regular pump overs ensured even fermentation and extraction. After a gentle press, the wine was sent straight to older French barrels for maturation for 8 months.
Colour: Brilliant ruby colour.
Nose: Hints of kirsch cherries and graphite with a touch of spiciness.
Palate: Delicate structure with a tight core, tart cherry flavours lead to a lingering finish.
Cellaring Notes: 5-7 years
Food Pairing: Crispy skin Salmon or lighter pasta dishes.
