Growing Region: Fruit was harvested from our Ferngrove Vineyard.
Notes: The soil profile had good levels of moisture, culminating in excellent conditions for the vines during bud-burst. The ripening period was steady with temperatures slightly below average for January and February, and then slightly above average for March and April. There were no significant rainfall events during this period. The near perfect weather produced reds with intense colour and flavour.
Winemaking Notes: A portion of fruit was hand-picked, delivered to our winery and gently destemmed into our open fermenters. The must was initially ‘cold soaked’ and then fermented warm. The ferment was regularly pumped over to ensure an even temperature and increase colour and tannin extraction. After a gentle press, the wine was sent straight to older French barrels for maturation for 15 months.
Colour: Deep, vibrant ruby.
Nose: Dried herbs and cassis with hints of cedar.
Palate: Medium-full bodied, firm yet supple tannins with a lingering finish.
Cellaring Notes: 5-7 years.
Food Pairing: Grilled T-bone steak with roasted root vegetables and red wine sauce.
